They have developed a model of varieties with a flavour profile desired by coffee lovers around the world, and also improved a process called slow fermentation and culturing (Culturing).\u003cbr\u003e\u003cbr\u003eThe Culturing Process is a fermentation technique used in various foods, such as yoghurt, from which they take their inspiration. It is a process whereby the fruit is fermented at the same time as the coffee is fermented, using micro-organisms that help each fruit to ferment. Coffee and fruit that are compatible in sugar content are mixed together and fermented anaerobically for a time that corresponds to the rate of fermentation of each fruit.
