When we released the Ethiopian Wush Wush in the past, we had many repeat customers. During this time, the temperature is controlled to maintain an environment conducive to anaerobic bacteria activity. Once fermentation is complete, the cherries are slowly dried over a long period of time (40-60 days), which results in the formation of a very dobvious sweet flavour.
